I have two stupid questions that I feel embarrassed about
The first: I put 15X8 rims on my truck and I was wondering if my speedometer is messed up and if there is anything to fix or adjust it?
The second: What does "Taco" mean? Is it slang for Toyota or what?

I don't believe that 15x8's will mess up your speedometer. And I believe when they say taco they are reffering to a tacometer. I could be wrong!

If you used the same tires your speedo will be fine. Taco=Tacoma

Changing the diameter of the tire will throw the speedo off, width of rim has no effect. For example, if you went from a 29" tall tire to a 31" tire, your speedo and odometer will read lower than actual speed/mileage.
Taco = Tacoma
tach = tachometer
