I have an 04 and I'm a game watcher. I would love to know how to get rid of the running lights, without driving around with the park brake on, nor removing lights. Anyone know?

I'm confused by your post. You said running lights but then you say use the parking brake. When you use the parking brake your brake lights don't come on but that has nothing to do with running lights. Are you trying to turn off your brake lights and still be able to use the brake pedal?
You could wire up a switch disconnect to the dash that would put an electrical open/shut in the path of the brake lamp. When you want to disconnect the lamp you would hit a button to put an open short in the electrical path.
More clarification needed. Plus there are laws against running without brake lights which need to be followed.

I'm after getting rid of the daytime running lights. I was told once to just click the park brake one click and they will be out, however, I'd rather not do this.

On my dads 91 when you pull the brake on one click so the light comes on on the dash and turn your truck off and start it up again your lights will stay off. You could figure out why the e brake switch turns them off and put a manual switch in so you could choose when you want them on or off.
