I am wanting to get 305/70/16 Buckshot Mudders for my '03 Tacoma 4x4, it is a V6 manual. I know I will probably at least have to get a 3 inch lift on it to clear these. Can anyone add any info on whether or not I may be looking at engine troubles down the road with the bigger tires. I have been told that I should be ok with my stock gears. Just wondering if I would be better off going with smaller tires in the long run.

I don't see why it would cause engine trouble. The load on the engine is increased but only slightly. Usually when you upgrade tires without matching gears you run into transmission/clutch problems if anything. That being said I've wheeled with a Taco with 35's on stock gearing(4.10) and the 3.4. The guys got way more power then I do with 4.56 gears, 37's and a 3.0. He wheels in 4hi which I could never dream of doing.
I think you will be fine.

;D Yeah man!! Your left leg will be hurtin' after a day of wheelin'. Not going to hurt the motor unless you totally abuse it. Later...
