Light drizzle outside...
It's chili time.
My basic recipe. Red chili w/meat.
Make substitutions as preffered.
Suggest trying this as is first.
Make 1/2 or 1/3 batch if nervous.
venison chili

1lb venison hamburger
1lb venison sausage(sw or ht)
1lb smoked meat(pork/beef/ven/chick)
(lightly season/hickory smoked 5hrs)
1 large green swt pepper
1 large red swt pepper
2 hot pepper of choice
(remove all seeds!!!)
2 large cans drk red kidney beans
2 can whole peeled tomatos(not Italian seasoned)
2 can crushed tomatos(not Italian seasoned)
1 large yellow onion
2-3 (heaping)tablespoons chopped garlic
(don't be stingy!)
cooking oil
chili powder
salt/pepper
RED HOT sauce(I use Franks)
Loaf crusty bread and real butter
1) dice/chunk cut peppers and onion. oil and heat stock pot(2-3 tbs oil). add peppers,onion. cook through 10-15 min then add garlic.
stir frequently.
2) heat large saucepan. oil lighlty. brown ham/saus.
3) cube smoked meat.(substitute 1tsp liquid smoke if necc)
4) chunk/cut peeled tomatos
5) add smoked meat and chunk tom to peppers and onions
6) drain browned meat w/serrated spoon or sieve.
7) add browned meat and remain tomato products to veg mixture
8) drain and rinse kidney beans well, add to mixture
9) bring up to temp(low to med)
10) taste test.--veg/peppers will be strong!
start w/ 2 tsp chili powder.
add RED HOT (1/4 cup if desired(no less than 2tbs))
do not add salt until after red hot
salt to taste after 2nd taste test.
add no more than 1tsp at a time.
Depending on the preferred texture of the vegetables. You may want
to let chili cook in crock-pot for 4-6 Hrs on low to soften them
Over cooking in crock-pot will make everything MUSH.
any meats can be substituted. do not omit a sausage what-so-ever!!!
(smoked meat just adds to a good recipe NOT REQUIRED)
I also encourage the use of any and all leftovers(except pasta, DUH)
