Typically a 12.50 would go on a 10" rim.
Some people (myself included) put 12.50's on an 8" rim as a sort of poor-mans beadlock. But this is a trail rig, not a DD.
But I think 7" is too narrow, esp if it's a DD.

I'm guilty of this as well and I DD or I should say used to DD it.The center tread will wear out way faster than the outer treads will so you def will not get your $ worth out of a set of tires.And like fourwd1 said 7" is just too narrow you would have to run about the same air pressure on the street that you would on the trails to even come close to having a good contact with the road surface.

i would go with a 10in rim, im currently looking to put a 12.5 on a 10" rim. it would definetly keep the tire from wearing sooner. Im not sure if a 12.5" would fit w/o tire rub, so you might have to look into wheel spacers to make them fit aswell
